MY FAVOURITE KALE SALAD

1 clove garlic

80g nuts- I like creamy ones like cashews and macadamia

1 tsp savoury yeast flakes

 

Grind up into a smooth paste with a food processor.

Then add

 

85 g oil - I use olive or avocado oil

30g vinegar - I like apple cider

10g raw honey - optional

1/2 tsp salt

 

Blend all together.

 

Dressing done!

 

De vein 2 bunches of Kale and chop finely then add to a large bowl with the dressing and toss really well to combine.

A trick to getting it all coated is actually put it all in a really large ziplock bag, close it up with some air inside and give it a good old shake around. Works really well, trust me.

Serve in a salad bowl and sprinkle liberally with chosen seeds like hemp, linseed, pepita, sesame and sunflower.

This Kale salad is our favourite and goes really well with a BBQ or roasted sweet potato. The dressing can be thinned out with the addition of water if you need and will thicken once in the fridge to use like a mayonnaise.
